Sweet potatoes are a great inexpensive substitute for regular potatoes. They still have carbs, however, they are far more nutrient packed than regular potatoes. This is also a great option to have a healthy version of French Fries without the "frying" part. There are only two things needed for this;

Optional: Any seasonings that you like.
Keep in mind that roughly one large sweet potato will yield about 2-3 servings of fries.

Peel and slice your sweet potatoes to your desired length, be sure to not cut them too thick.
Put them into a bowl and add your spices as well as olive oil. The amount of olive oil will depend on how many fries you have, for one or two potatoes, 1 tablespoon of olive oil is plenty. I also added minced garlic, green onions (of course I did, those go into EVERYTHING!) as well as parsley, and bit of sea salt.
Place the fries on greased cookie sheet, and bake at 350 degree for 1 hour. You can always adjust cooking temp and time if you prefer crispier fries.
These make the perfect side dish that taste like a treat!
