You can make these with cauliflower and almost any other veggie, I've found that I like them alone without any veggies as well as with broccoli, but not with corn. Any vegetable that can be steamed and mashed will work, and you can add any crazy items you'd like as well, I've seen carrots, seeds, nuts, beans, there really isn't anything that wouldn't work so long as its a soft food!
Ingredients:
1 Medium head of cauliflower, cleaned and cut into pieces
2 cups of another mash-able veggie, your choice
1 cup bread crumbs
1/2 cup green onions, chopped
Any seasonings that you would like, fresh garlic also wouldn't be a bad additive.
Optional 1/2 cup cheese of your choice
This will make about 8 patties, as a side, one per person is perfect, adjust accordingly.

Steam your vegetables any way you'd like, and transfer them to a bowl. Mash them as best as possible, you can use a whisk, or potato masher, either will do.
Add in your preferred spices, onions, and cheese. Mix well.
Take either a large spoon, or an ice cream scoop, and scoop the mixture into a greased, hot pan on medium heat (see the photo below). Let them sit as is for about a minute, and the flip with a spatula. I've found that a silicon spatula works the best. Cook them in the manner you would a pancake. Once you feel that they are done (the middle is not going to get crispy, this is just for the outside texture), remove from the pan, and enjoy!
